Stuffed Squid with Feta

Mains

You will need

4 large cleaned squids

30 ml olive oil

1 onion

2 leeks (white part)

1 garlic clove

1 green bell pepper

1 Florina pepper (or another sweet red pepper)

30 ml ouzo

400 g feta cheese

Salt

Pepper

For the sauce

80 ml olive oil

10 basil leaves

2 tablespoons mustard

Juice of 1 lemon

Lemon zest

Salt

Pepper

COOKING TIME

  1. Clean and wash the squids thoroughly, then set them aside to drain.
  2. In a deep pan, heat the olive oil and sauté the chopped onion, leeks, and garlic.
  3. Add the peppers cut into small cubes and stir until they become shiny.
  4. Pour in the ouzo and let it evaporate.
  5. Remove the pan from the heat, lightly season with salt and pepper, and let it cool for a bit.
  6. Add the crumbled feta cheese and stir.
  7. Use a spoon to stuff the squids with the mixture and secure them carefully with toothpicks.
  8. Brush the stuffed squids with a little olive oil and grill them in a grill pan for about 6 to 7 minutes on each side.
  9. Once cooked, drizzle with the sauce
  10. For the sauce, place all the sauce ingredients into a food processor and blend until smooth.
